Get data from New Email section

Hi, there is a way to get the data from the New Email/New Ticket Forms?

I would like to extract the data from multiples fields in New Email/New Ticket, then manipulate that data for multiple purposes.

Reading the documentation I find that DOMhelp could be useful but that module has been deprecated, there is another module that I can use.
